Preserve: The Midtown Culinary Center

The Midtown Culinary Center aims to both showcase Mississippi’s culture and cuisine while also providing the community with access to quality foods, culinary education, workforce training, and community engagement. Located in the Midtown Neighborhood of Jackson, the Midtown Culinary Center will house a Multi-Purpose Event Space, a Recording Studio Kitchen, a Commercial Kitchen, a Chef’s Counter, and a Farmer’s Market and Outdoor Garden. The Midtown Culinary Center is a collective effort of Nick Wallace Culinary, Midtown Partners, Hope Credit Union, and the Millsaps College ELSEWORKS Entrepreneurship Program.

rooted: A Modern Mississippian map to american home cooking

With Rooted, Mississippi chef Nick Wallace recasts the elemental ingredients of place - among them Delta dirt, open sea, autumn woodland, and country churchyard. Inspired by a host of voices and collaborators, he blends together these places and products in the shared spiritual roux of the American home-cooked meal - whatever form that home might take. Rooted ties the past and the future together through contemporary recipes and a culinary paradox that Wallace calls the “Modern Mississippian”.
